Philippe GROULT is a French chef who is passionate about Chinese food. He is currently head of the cuisine department of Le Cordon Bleu in Paris. Dining in China and eating with Chinese friends has taught him a lot over the years. He brings the knowledge and techniques he has learned into his kitchen, combining elements of Western and Chinese cuisine.
